KVK Dimapur has conducted a five-day vocational training on Value addition of pineapple and ginger at Village Council Hall, Ruzaphema, Chumoukedima, Nagaland from 26th to 30th August 2024. The programme was inaugurated with the welcome address by the course co-ordinator Dr. Chingakham Sima Chanu, SMS, Home Science. The keynote address on the importance of creation of entrepreneurship through value-addition was delivered by Dr. Moanaro (Programme Assistant). Different topics on food processing were delivered by the resource persons followed by Hands on Training. Sessions on the topics “Post harvest loses of Fruits and Vegetables” and “Processing of Pineapple and Ginger” were delivered by Dr. Aabon W. Yathan (Scientist, Horticulture) ICAR NEH Nagaland Centre. “Layout and Design of Mini Processing Plant”, “Hygiene and Sanitation required for Fruits and Vegetables” was delivered by Dr. Chingakham Sima Chanu. “Cost Calculation, Labelling, Packaging and Storage of Value -added Products of Pineapple and Ginger” was delivered by Dr. Anupama Bora, Assistant professor, Dept. of VSSD, School of Agricultural Sciences, Nagaland University. Later, Hands- on-training was given on Preparation of Pineapple Squash, Pineapple RTS Beverage, Ginger Candy, Dried Ginger Slices, Pineapple Sauce, Ginger Paste. The training programme was concluded with remarks and distribution of certificates by Dr. Phool Kumari, Senior scientist cum Head, KVK Dimapur. All together 30 participants including 24 youth were given practical experience.
